Drawing figure help you learn the anatomy of the bodies, especially the proportions, the contours, the shading, the way the skin stretches and pulls, what bones and muscles are visible, and how they interact with one another. Drawing from a reference is good too, but you lack the depth and the interaction between the object and lighting, and the nuances.

Yeah, muscles are super weird and very difficult to just like, imagine or remember how they work. Most great artists know the anatomy of the human body as well as some medical professionals.
