Umm...you can turn a chapter back to draft...Or atleast put save draft and publish button far away. When you accidentally click on publish instead of save draft, you now have to hastingly complete the whole chapter before anyone sees it.

Edit the chapter you want to revert
Follow there 3 steps.
Boom, it's back to being a draft.
You can also click the Edit blue button above the Published date and change it to some point in the future, which will also unpublish the chapter, but instead, schedule it to be published later on instead of saving as a Draft.
