I wouldn't say it was a final editing. Just the first revision. It took about as long as writing the 2nd draft.

And suddenly I had the idea: what if someone plagiarized poorly. Like, every chapter was taken from a different story but they changed names to make it seem like it's a continuing story?

This actually isn't wrong. If you feel you're telling your STORY in just 30k words, then what's probably is happening is you're focused on the story and nothing else. How do you break free of that? Explore the characters, world build, and add more description to things in general.
