Epidemiologists have more sophisticated linefits and estimates that take into consideration the eventual dropoff in infection rate (flatting of the curve) due to large potions of populations having already been infected, but in early periods simple exponential functions or polynomial fits can give very good approximations for infection rate when only small portions of the total population is infected.
