For me, it's Robinson Crusoe by Daniel Defoe or Beowolf. Both are books that I grew up reading and have various different editions of them. They have influenced me in all my forms of writing.
One Two Three Infinity is my pick, it's mostly a maths book made interesting. Flatland, is another one, which is a romance book with maths in it
You can thoroughly enjoy One Two Three Infinity even without applying maths, as for Flatland...well...just skip the first chapter
