To parry you have to be holding down ZL, time the enemy's attack, and without letting the shield down, press Y

The great plateau is pretty much the tutorial area of the game. Once you do 4 shrines you get given a paraglider that allows you to leave.

There should be a dot on your mini map telling you to go to an underground tower. That activates the shrines.
