I think I would be an asshole mentor who like teaching (and beating) the main character until the main character eventually surpassed me. Then later I got killed in the background without the main character know that his mentor was murdered.

A god that builds a massive volcanic foundry in an otherwise desolate, frozen land. (ie go to a tropical island and then magically change the biosphere so that only things I deem personally useful can survive)
Then, I'd just spend eternity forging all sorts of awesome weapons, randomly giving them out to heroes or those that reach my home in exchange for entertainment~.
